Salmon Burgers with Lime Mayonnaise

Thought burgers were bad news? Let us prove you wrong! These salmon burgers are simple to prepare, and prefect for a relaxed weekend meal, and if there is any left over - they're also great cold.

Salmon is rich in omega 3 fatty acids, thought to protect against heart disease. Wholegrain rolls provide fibre and B vitamins, and the salad is a source of vitamin C and potassium.

Ingredients: Serves 4

For the burgers

  • 450g skinless salmon, cut into pieces
  • 100g wholemeal breadcrumbs
  • 1 egg
  • Small handful fresh basil, chopped
  • 1 shallot, finely chopped
  • Freshly ground black pepper
  • 2 tbsp rapeseed/vegetable oil, for frying

For the mayonnaise

  • 100g half fat mayonnaise
  • 100g low fat natural yoghurt
  • Juice and zest of one lime
  • 1 tbsp chopped basil
  • Freshly ground black pepper
  • Half a teaspoon of garlic puree (optional)

To serve

  • 4 mulitgrain/wholegrain/wholemeal rolls
  • 75-100g bag of rocket, washed
  • 2 handfuls fresh spinach
  • 3 plum tomatoes, sliced

How To...

  • 1.Put the salmon, breadcrumbs, egg, shallot, and basil into a food processor and blitz until mixed with a rough texture. Season with black pepper.
  • 2.Shape the mixture into four equal sized burgers. Place on a baking tray and chill for 30 minutes
  • 3.Whilst the burgers are in the fridge, place the mayonnaise, low fat yoghurt, basil, lime juice and rind, black pepper and garlic in a bowl and mix well. Place in a serving dish.
  • 4.Rinse the rocket (reserve a handful for the burgers) and spinach and toss together. Pile an equal amount on each plate and arrange slices of tomato on each.
  • When the burgers have been chilled, heat the oil in a large frying pan and cook for around 3 minutes on each side or until golden and cooked through.
  • To serve, slice the buns and place a spoonful of lime mayo on each. Top with a burger, the remaining rocket and add the lid. Serve with the salad and remaining lime mayonnaise.
